Based on the roasting of the green coffee bean, we can produce various types of coffee.

When aiming for the brown colour while roasting, we then produce the respective Greek or Cypriot coffee.

Espresso

Espresso is coffee brewed when pressurised boiled water is forced through a compressed layer of ground coffee producing thick tasty coffee in a compressed form.

Espresso Crème:

What makes an espresso perfect is its cream. It’s light brown cream on the surface of the espresso which is produced by the combination of fresh coffee ground to the right degree, water, temperature and pressure.

Espresso types:

REGULAR: 6-7 gr of coffee, pressurised water, 93-960 C per cup, 40 + 50 ml

MACCHIATO: A regular espresso with the addition of whipped milk on the top

CORETTO: A regular espresso with the addition of alcohol

ROMANO: A regular espresso with the addition of a slice of lemon

AMERICANO: regular espresso with the addition of boiled water

CAPPUCCINO: A regular espresso with frothy milk

DOUBLE ESPRESSO: Two espresso shots served in a 150 ml cup

Filter

Filter coffee was perfected by the French and it has been recognised by experts as one of the best types of coffee. This is because before the filter machine acquired its present form, several other distillation machines were used to filter coffee, thus allowing for the process to be perfected. Ground coffee is placed in a filter and then boiled water, which is poured from the top, comes into contact with it (distillation), thus producing a clear beverage.

The first machine appeared in France in 1800.
